Sara from Ms. Adventures in Italy and Michelle from Bleeding Espresso declared Friday, February 5th World Nutella Day 2010.
I made cupcakes inspired by Mozartkugeln which are made from almond marzipan, pistachio marzipan, nougat and chocolate.
Makes 6 cupcakes.
- 1 egg
- 1/4 cup butter
- 1/4 cup + 1 tsp sugar
- 1/4 cup marzipan (almond paste)
- 1/2 cup flour
- 3 Tbsp almond flour
- 3 Tbsp pistachio meal
- 1/2 tsp baking powder
- 1 pinch salt
- 3 tsp milk
- Nutella
- about 3 oz. chocolate
Butter a muffin pan and preheat the oven.
Sift flour, baking powder and salt into a bowl and mix it. Divide mixture into two parts. Mix one part with almond flour, the other part with pistachio meal.
Beat butter, sugar and marzipan until combined. Add the egg and beat until creamy. Mix in the milk. Divide mixture into two parts. Mix one part with almond-flour-mixture, the other part with pistachio-flour-mixture.
Fill three moulds with almond batter and three moulds with pistachio batter.
Bake about 22 minutes at 350° F until a cake tester comes out clean.
Let them cool completely on a cooling rack.
Slice through the cupcakes lengthwise. Spread Nutella on one half almond cupcake and piece together with one half pistachio cupcake.
Chop the chocolate and melt it in a double boiler. Cover cupcakes with chocolate.
