
This is my entry in the Mediterranean Cooking Event.
- 200g bulgur
- 1 pepper
- 2 tomatoes
- 1/2 cucumber
- 2-3 spring onion
- 1 bunch flat leaf parsley
- few leaves spearmint
- 1 EL Acı Biber (hot pepper sauce)
- tomato paste
- salt, pepper, cumin, coriander
- lettuce
Soak bulgur in hot water for about half an hour. Cut pepper, tomatoes and cucumber in small dices and spring onion in thin slices. Chop parsley and spearmint.
Flavor the bulgur with pepper sauce, tomato paste, salt, pepper, cumin and coriander. Stir until mixed well. Mix in the vegetables and herbs. Arrange the salad on the lettuce.
